Paleo Chorizo Egg Muffins

These are very easy and quick paleo chorizo egg muffins and well suitable for breakfast, lunch or snack. The Recipe is gluten free and lactose free.
Chorizo is a Spanish pork sausage flavored with onion, garlic, chili, pepper and other seasoning. You can replace it in the recipe with other sausage or ham.

Ingredients
  • 3,5 oz (100 grams) Chorizo sausage
  • 1 Red bell pepper
  • 5 Eggs
Instructions
  1. Wash bell pepper and chop into small pieces
  2. Chop chorizo into small cubes (If you use fresh sausage cook it in a pan first)
  3. Whisk the eggs in a bowl
  4. Combine all ingredients
  5. Pour in to a nonstick muffin pan
  6. Bake in 400 F (200 Celsius) for about 10 minutes
