High Fiber Paleo Cereal Recipe
This is a great gluten-free morning cereal that includes the health benefit of chia seeds. Combine with non-dairy milk of choice.
2 teaspoons of chia seeds
1 Tablespoon of coconut flakes
1 Tablespoon of raw sunflower seeds
1 Tablespoon of raw pumpkin seeds
Handful of cranberries
Handful of cashews
Sprinkle of cardamom and cinnamon
Hemp, nut or seed milk (enough to cover the cereal)
Add carob or green tea matcha powder for extra flavor (optional)
Let the chia seeds soak for 10 to 15 minutes in non-dairy milk of choice. Combine other dry ingredients, mix with chia seeds. Cover cereal with non-dairy milk and enjoy.
