Paleo Salad Dressing Recipes

1. Basic Salad Dressing recipe and Instructions for spicing it up

This recipes is suitable for Paleo, Gluten-Free, Lactose-Free, Vegan diet

1-2 Servings

4 tablespoons olive oil
1 tablespoon vinegar
Salt, black pepper, to taste


  • Mix the ingredients and season the sauce to your taste and to suit the salad.
  • Use cold-pressed, greenish olive oil, when you want the dressing to have of fine oil flavor.
  • The best olive oil is the first compression “extra virgin” olive oil. Olive oil is ideal for all Mediterranean salads.
  • You can substitute vinegar with lemon juice, orange juice, berry juice or water.
  • Balsamic vinegar gives a rich taste to the dressing. The finest and most expensive is genuine, more than 12 years old Aceto Balsamico.
  • A pinch of salt and pepper are sufficient basic spices.
  • Add more flavor with mustard, garlic, other spices and chopped herbs.
  • Parsley, chives, thyme and basil are very suitable for summer salads.

You can make your own spiced vinegar and oil:
Add a branch or leaves from tarragon, mint, rosemary or dill to a bottle of vinegar
Add herbs and garlic to a bottle of olive oil


2. Cashew Dressing

This recipes is suitable for Paleo, Gluten-Free, Lactose-Free diet
This recipe contains nuts

Cashew is particularly ideal for sauces and dressings. It forms a creamy structure when finely processed in a food processor or blender.

1 Cup Cashew nuts
Juice from ½ lemon
1 garlic glove
1 teaspoon honey (optional)
1 teaspoon mustard (optional)
½ teaspoon salt

Soak the cashew nuts 4-8 hours, then rinse and put in a blender. Add the other ingredients and process in to a smooth paste.


3. Vinaigrette

Green salads best friend is a French salad dressing – Vinaigrette.
The sauce is easy and inexpensive to produce and at the same time you avoid the additives in ready-made dressings.
Make a bigger amount at the same time, it remains well in the refrigerator. Or make a small amount of vinaigrette into the bottom of the bowl before adding the salad.

4 tablespoons Balsamic or Apple cider vinegar
1 tablespoon Organic Dijon Mustard
1/2 cup Olive oil
Add more flavor by adding basil, oregano, thyme, rosemary or garlic.

4. Homemade Paleo Mayo Recipe

This recipes is suitable for Paleo, Gluten-Free, Lactose-Free diet
This recipe contains egg
2 Egg yolks
1 cup Olive oil
1-2 teaspoons Organic Dijon Mustard
3 tablespoons lemon juice
1 teaspoon honey
Dried tarragon or other herbs to taste
Salt and black pepper to taste
Vinegar to taste (optional)

Put all the other ingredients except the olive oil, herbs and black pepper into a blender and mix well.
While the blender spins add olive oil and let it mix.
Add herbs and black pepper, mix.
Check the flavor and add salt or vinegar if needed
Store in a refrigerator in a glass jar, mayo stays good for at least a week.

5. Flax Seed Mayo

This recipes is suitable for Paleo, Gluten-Free, Lactose-Free, Vegan diet
2 tablespoons flax seeds or 4 tablespoons flaxseed meal
½ cup warm water
1 teaspoon salt
1 teaspoon mustard powder
1 cup olive oil
2 tablespoons apple cider vinegar
Other spices

Ground the flaxseeds or use flaxseed meal
Mix water and ground flax seeds. Let soak for 10 minutes.
Mix oil, vinegar, salt and mustard powder with the flax seeds and water.
Beat with a whisk or an electric mixer until creamy.
Season with, for example, sweet pepper and curry powder, garlic or other spices of your choice.

Mayonnaise stays good for about a week in the refrigerator. Mix prior to serving.

Herb pesto is delicious sauce for pasta as well as for salads.
You can prepare the pesto from any of your favorite herbs.

2 cups of herbs of your choice, for example basil, coriander, mint, marjoram, parsley, lemon balm, rocket
½ cup grated parmesan cheese (optional)
2-3 garlic gloves
1 grated lemon zest
Juice from ½ lemon
½ cup olive oil
1 teaspoon salt

Put the herbs, garlic and grated lemon zest in a blender or food processor.
Spin the ingredients into pieces.
Add the oil gradually while the processor is running.
Season the pesto with salt and lemon juice.

Pesto is at its best freshly prepared, but will remain a week in the refrigerator in a glass jar.


8. Lemon Honey Salad Dressing

This recipes is suitable for Paleo, Gluten-Free, Lactose-Free diet

Makes about 1 cup of dressing

½ cup olive oil
¼ cup lemon juice
¼ cup honey
2 tablespoons vinegar
1 minced garlic glove
1/4 teaspoons salt
1/4 teaspoons black pepper


Combine all ingredients and mix until smooth.
Pour on the salad or serve separately.
Store the dressing in the refrigerator in a sealed container.
Dressing should always be mixed prior to use to ensure that the ingredients are mixed evenly.

¼ cup olive oil
¼ cup lemon juice
